Recently, more and more attention has been paid to popular famous restaurants in Japan as a plenty of web services about gastronomy have come up.
It is heavy burden for chefs to handle reservation related tasks during working hours, especially, for small group restaurant (Generally, high-end Sushi, Japanese restaurants tend to have smaller number of seats and staff).
As seats are fully booked for the coming 6 months or sometimes more than a year, customers have to take reservation for a long time ahead. In this situation, there are not a few cancellations happened and in worst case, no show.
In case the restaurant cannot find other customers, they are forced to incur the cost for food ingredients.
